TASTE: LEMON PEPPER KALE

Without further adieu...my kale recipe. This is hands down the most popular side item served in our home. It is also on of the easiest so I don't mind having to make it every other night, for parties or just as a snack. The trick is to cook the kale just enough so the outer pieces become dehydrated while the inside stays nice and juicy. It is the perfect mix of crunchy and chewy. 
Ingredients:
  • 1 Bunch Kale
  • 1 TBSP Lemon Pepper, Halved (one whole fresh lemon can be substituted here, just add extra pepper)
  • Salt to taste 
  • Olive Oil Cooking Spray
  1. Preheat oven to 400 degrees
  2. Chop kale in to long strips leaving the chunky stems intact
  3. On a large non stick baking sheet, spray a light layer of olive oil
  4. Spread half of kale evenly along the baking sheet
  5. Spray another light layer of olive oil
  6. Pour 1/2 TBSP lemon pepper across top of kale
  7. Sprinkle salt all over 
  8. Repeat steps 4-7 with the remaining kale
  9. Bake kale for 20min, tossing halfway through
*For crispier kale leave in oven an extra 5min
