Ingredients:
- 1 Bunch Kale
- 1 TBSP Lemon Pepper, Halved (one whole fresh lemon can be substituted here, just add extra pepper)
- Salt to taste
- Olive Oil Cooking Spray
- Preheat oven to 400 degrees
- Chop kale in to long strips leaving the chunky stems intact
- On a large non stick baking sheet, spray a light layer of olive oil
- Spread half of kale evenly along the baking sheet
- Spray another light layer of olive oil
- Pour 1/2 TBSP lemon pepper across top of kale
- Sprinkle salt all over
- Repeat steps 4-7 with the remaining kale
- Bake kale for 20min, tossing halfway through
*For crispier kale leave in oven an extra 5min
